Hand harvested, crushed and pressed to tank. Fermentation occurred naturally in a mix of new and neutral French oak. Aged on lees without disruption for 11 months before some time in stainless steel. The final blend is around 30% new oak with a little naturally occurring malolactic fermentation.
The ultimate drawcard for Beechworth is decomposed granite - providing structure and power in Chardonnay without sacrificing balance or freshness. Stone fruit, lemon curd, almond and a hint of spice with a long, textured palate.
